Kickin’ Kale Chips

Try these lightly salted, crispy kale chips to satisfy your urge for crunchy chips. It’s a great way to introduce yourself to kale – or to get picky eaters to try healthy greens.


  • 1
    large bunch fresh kale, washed and fully dried
  • 1 Tablespoon
    extra virgin olive oil
  • Salt and freshly ground black pepper


  1. Remove ribs from kale and cut leaves into large chip-sized pieces. Add the olive oil and toss thoroughly to coat.

  2. Lay the pieces out in single layer on a baking sheet and sprinkle with salt and black pepper. Bake at 250°F for about 30 minutes, or until crispy.

Nutrition: Per serving: 60 calories, 7 g carbohydrate, 1 g dietary fiber, 4 g total fat (<1 g saturated fat), 2g protein, 170 mg sodium
